How to Make Sweet Potato Casserole Side Dish

Step 1: Preheat your oven to 350°F. Spray a 2-quart casserole dish with non-stick spray and set aside.
Peel and dice the sweet potatoes. Place them in a large stock pot, cover with water, and bring to a boil. Cook for about 15 minutes, or until tender.

Step 2: Strain the sweet potatoes and transfer them to the bowl of a stand mixer. Mix on low for about 2 minutes until mashed, scraping down the sides often.

Step 3: While the potatoes are still warm, add the butter and mix well.

Step 4: Add milk, brown sugar, egg, vanilla, cinnamon, allspice, salt, and nutmeg. Mix thoroughly, scraping down the sides as needed.

Step 5: Transfer the sweet potato mixture to the prepared casserole dish and bake for 40 minutes.

Step 6: Remove from the oven and sprinkle the mini marshmallows over the top, spreading them into an even layer.

Step 7: Bake for an additional 5 minutes, or until the marshmallows are slightly toasted and starting to melt.

Step 8: Let the casserole cool slightly before serving.
Important Recipe Notes

- Dice the sweet potatoes into similar-sized pieces so they cook evenly and become tender at the same time.
- Mash the sweet potatoes while they’re still warm for a smoother, creamier texture.
- Soften the butter beforehand: Softened butter blends more easily into the mashed sweet potatoes, helping create a rich and creamy filling.
- You can reduce the brown sugar if you prefer a less sweet casserole, especially when serving it alongside savory holiday dishes.
- Avoid overmixing: Mix just until the ingredients are combined to keep the casserole soft and creamy.
- Add marshmallows at the end: Sprinkle the mini marshmallows over the casserole during the last few minutes of baking to prevent them from burning.
- Make ahead: Prepare the sweet potato mixture a day ahead, transfer it to the baking dish, cover, and refrigerate. Add the marshmallow topping before the final baking time.
- Keep leftover casserole in an airtight container in the refrigerator for up to 3–4 days. Reheat in the oven or microwave until warmed through.
