These Biscoff Cookie Bars are the perfect combination of chewy cookie goodness and rich, spiced Biscoff spread. These bars are a sweet and indulgent treat that’s super easy to make.

Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup white granulated sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup chocolate chips
  • ½ cup butterscotch chips
  • 1 cup Biscoff spread

Instructions

  • Preheat the oven to 350°F (175°C) and line your baking dish with parchment paper for easy cleanup and to prevent sticking.
  • In a large mixing bowl, cream together the butter (make sure it’s softened for smooth mixing), white granulated sugar, and brown sugar. Use your hand mixer to beat until it’s light and fluffy—this will help create that melt-in-your-mouth texture.
  • Now, add in the egg and vanilla extract. Mix everything together until it’s well combined. This is where the magic starts to happen!
  • Next, grab your dry ingredients: all-purpose flour, baking soda, baking powder, and salt. Add them all in at once and fold them into the wet ingredients until a thick cookie dough forms. You might need to use a spatula or spoon to get everything well incorporated.
  • Fold in your chips—both the chocolate and butterscotch chips. These will add little pockets of deliciousness throughout your cookie bars.
  • Split your cookie dough in half. Press the first half of the dough into the bottom of your prepared baking dish, spreading it evenly.
  • Melt the Biscoff spread in the microwave for about 10 seconds—just enough to make it pourable. Pour it over the first layer of cookie dough and spread it evenly.
  • Add the second half of your cookie dough on top of the Biscoff layer, carefully covering as much of the spread as you can.
  • Pop your cookie bars into the oven and bake for about 30 minutes. The top should be lightly browned, and your kitchen will start to smell absolutely amazing. Check with a toothpick if you’re unsure—just make sure it comes out clean.
  • Once baked, let your bars cool completely in the pan and then cut into squares.
