Ingredients

  • 2 yellow onions
  • 4 oz cream cheese
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 3 tbsp unsalted butter
  • 1 tbsp chives, sliced
  • ¼ tsp salt, or to taste
  • ¼ tsp black pepper, or to taste

Instructions

  • Start by peeling and thinly slicing your onions. Don’t worry about being perfect—once they caramelize, they’ll be soft and delicious.
  • Melt your butter in a pan over medium-high heat and toss in those sliced onions. Stir them occasionally to keep them from burning. Once they start to brown, lower the heat to medium-low and let them slowly cook to perfection. The trick is patience! Caramelizing takes about 20-25 minutes, but it’s worth it for that sweet, golden goodness.
  • While your onions are doing their thing, grab a food processor and add the cream cheese, sour cream, and mayonnaise. Season it up with salt and pepper, then blend until smooth and creamy.
  • Once your onions are beautifully caramelized, let them cool for a few minutes (about 5 minutes is perfect). Add them to the food processor and give it a quick pulse—just enough to mix the onions into the creamy base while still keeping some texture.
  • Scoop your caramelized onion dip into a bowl, sprinkle with chopped chives for a fresh finish, and serve it up with your favorite chips. This dip is also amazing with veggie sticks or even spread on bread for a twist!
