Cheesecake Parfaits

Indulge in these quick and easy Cheesecake Parfaits, a delightful no-bake dessert layered with creamy cheesecake filling, crunchy graham cracker crumbs, and fresh fruit. Perfect for treating yourself or impressing your loved ones!

Ingredients

  • 1 ½ cup Graham cracker crumbs, crushed
  • 2 - 8 oz packages Cream Cheese, softened
  • 3 Tbsp Heavy Cream
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Lemon Zest
  • 1 Tbsp Vanilla
  • 1 ½ cup Fresh Fruit (strawberries, blueberries, raspberries, blackberries or a mix)

Instructions

  • Line out your parfait containers.  Fill each one with about 2 heaping tablespoons of crushed graham crackers.
  • In the bowl of a stand mixer, combine the softened cream cheese and sugar.  Mix to combine well.
  • Add in the heavy cream and whip until thoroughly combined, about 3 minutes on medium speed.  Scrape the sides often.
  • Add in the vanilla, lemon juice and lemon zest.  Mix to combine.
  • Spoon the filling mixture into each trifle cup.
  • Top with the fresh fruit of your choice.
