Cheesy Mexican Pinwheels

These Mexican Pinwheels are the perfect appetizer for parties, game days, or whenever you’re craving something bold and delicious. Easy to make and packed with flavor, these pinwheels are always a crowd favorite!

Ingredients

  • 4 large burrito-size flour tortillas
  • 4 oz cream cheese (softened)
  • ⅓ cup sour cream
  • ⅓ cup hot salsa
  • 1.25 oz packet of fajita seasoning
  • 4 oz can of diced green chiles (drained)
  • 1 cup fiesta blend cheese
  • ½ cup chopped black olives

Instructions

  • In a medium bowl, blend the cream cheese, sour cream, salsa, and fajita seasoning. This creates a creamy, flavorful base that will really bring the party to your tortillas.
  • Divide the creamy mixture evenly across all 4 tortillas. Use a silicone spoon to spread it out, making sure to get it all the way to the edges.
  • Sprinkle the diced green chiles, fiesta blend cheese, and black olives over the tortillas. The cheese will melt and get all gooey when they’re rolled up—trust me, it’s magic!
  • Starting from one end of each tortilla, tightly roll it up, making sure everything stays inside. When you reach the other end, you’ll have a neat little roll ready to be wrapped up.
  • Wrap each tortilla roll tightly in plastic wrap and let it chill in the fridge for at least 1 hour. This allows the flavors to meld together and makes slicing them later much easier!
  • Once chilled, remove the rolls from the plastic wrap and cut off about 1 inch from each end (don’t let that go to waste—give it a taste!).
  • Then slice the rest into 1-inch pieces, and voilà! You’ve got a platter of pinwheels ready to serve.
