First things first—preheat your oven to 350°F (175°C). Grab a baking sheet and line it with parchment paper to keep those cookies from sticking. Set it aside while you mix up all the deliciousness.
In a bowl, whisk together the flour, baking soda, and salt. Set this bowl aside for later when we add it to the wet ingredients.
In the bowl of a stand mixer (or using an electric hand mixer), beat the softened butter with the brown sugar and granulated sugar on high speed. You’ll want to keep going for at least 2 minutes until it turns a lovely light brown.
Add in that chocolate pudding mix, vanilla extract, and eggs. Keep mixing for another 3-4 minutes. Trust me, this step makes the cookies super rich and delicious.
Slowly add your dry ingredients to the wet mixture—turn the mixer to low first to avoid a flour explosion! After about a minute, crank it up to high and mix until everything is combined and smooth.
Then, add your crushed Oreos and mix them in with a rubber spatula.
Now it’s time to scoop out your cookie dough. Use a cookie scoop (or a spoon) to form even balls of dough and place them on your prepared baking sheet.
For an extra Oreo kick, pinch a little bit of crushed Oreo and sprinkle it on top of each cookie ball. This gives them a little extra texture and Oreo flavor on top!
Pop those beauties in the oven and bake for about 10-12 minutes, or until they’re just starting to turn golden on the edges and are set on top.
Once they’re done, let them sit on the baking sheet for about 5 minutes to cool slightly before transferring them to a cooling rack.
