Chocolate Oreo Cookies

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup salted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 3.4 ounces instant chocolate pudding mix
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups crushed Oreos (whole pack)

Instructions

  • First things first—preheat your oven to 350°F (175°C). Grab a baking sheet and line it with parchment paper to keep those cookies from sticking. Set it aside while you mix up all the deliciousness.
  • In a bowl, whisk together the flour, baking soda, and salt. Set this bowl aside for later when we add it to the wet ingredients.
  • In the bowl of a stand mixer (or using an electric hand mixer), beat the softened butter with the brown sugar and granulated sugar on high speed. You’ll want to keep going for at least 2 minutes until it turns a lovely light brown.
  • Add in that chocolate pudding mix, vanilla extract, and eggs. Keep mixing for another 3-4 minutes. Trust me, this step makes the cookies super rich and delicious.
  • Slowly add your dry ingredients to the wet mixture—turn the mixer to low first to avoid a flour explosion! After about a minute, crank it up to high and mix until everything is combined and smooth.
  • Then, add your crushed Oreos and mix them in with a rubber spatula.
  • Now it’s time to scoop out your cookie dough. Use a cookie scoop (or a spoon) to form even balls of dough and place them on your prepared baking sheet.
  • For an extra Oreo kick, pinch a little bit of crushed Oreo and sprinkle it on top of each cookie ball. This gives them a little extra texture and Oreo flavor on top!
  • Pop those beauties in the oven and bake for about 10-12 minutes, or until they’re just starting to turn golden on the edges and are set on top.
  • Once they’re done, let them sit on the baking sheet for about 5 minutes to cool slightly before transferring them to a cooling rack.
