Corndog Mini Muffins

Ingredients

  • 1/2 cup cornmeal
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 2 tablespoons honey
  • 1 egg
  • 1/2 cup milk
  • 1 tablespoons vegetable oil
  • 6 hot dogs, cut into four pieces

Instructions

  • 1. Preheat your oven to 350°F and lightly coat a mini muffin pan with nonstick cooking spray.
  • 2. In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar, whisking them together.
  • 3. Add the honey, egg, milk, and vegetable oil to the dry ingredients and stir until well blended.
  • 4. Spoon the batter into the muffin cups, filling each one halfway.
  • 5. Place a piece of hot dog into the center of each muffin.
  • 6. Bake in the preheated oven for 20 to 25 minutes until the muffins are golden brown.
  • 7. Let the muffins cool in the pan for about 5 minutes before serving.
