Set your oven to 350 degrees F.
Roll out the crescent dough on a piece of parchment paper. Don’t worry if you see some seams; just push them together gently. You want a nice, smooth surface for all those delicious toppings.
Evenly spread the fig preserves over the dough, leaving about a ½ inch border around the edges. This will ensure that your filling doesn’t spill out when you roll it up.
Sprinkle on the brown sugar, crumbled honey-flavored goat cheese, and fresh thyme leaves. The combination of flavors is going to be amazing!
Carefully and tightly roll the dough into a log horizontally.
Pop the log into the freezer for about 10 minutes. This will firm it up and make slicing much easier. Trust me; it’s worth the wait!
Remove the dough from the freezer and, using a sharp knife, cut it into ½ inch thick slices. For clean cuts, wipe off your knife after each slice to avoid any sticking.
Place the slices on a parchment-lined baking sheet and bake for 13-15 minutes, or until they’re golden brown on the top and bottom. The aroma wafting through your kitchen will be irresistible!
Once they’re done baking, plate the pinwheels and sprinkle with additional thyme if desired. Serve them warm, and watch as your guests devour them!
