Ingredients

For the Cookie layer

  • 2 cups all-purpose flour
  • 1 cup powdered sugar
  • 1 cup salted butter
  • 1 tsp vanilla extract

For the Caramel layer

  • 1 cup unsalted butter
  • 1 cup light brown sugar
  • 1/2 cup light corn syrup
  • 14 ounces sweetened condensed milk

For the Chocolate layer

  • 3 cups chocolate chips (milk chocolate or semi-sweet)
  • 1 tbsp unsalted butter

Instructions

  • First things first, preheat your oven to 350°F (175°C). While that’s warming up, grab a 9x13 inch baking dish and spray it with non-stick spray. If you have parchment paper on hand, go ahead and line the dish—this makes it easier to remove the bars later!
  • In a large mixing bowl, combine the flour and powdered sugar. Next, cut in the salted butter. You can use a fork to mash it all together until you get a crumbly mixture. This process might take a few minutes, but trust me, it’s worth it!
  • Once you’ve got those lovely crumbs, add the vanilla extract and mix it in. Now, press this delicious mixture evenly into the bottom of your prepared baking dish.
  • Pop the dish into your preheated oven and let it bake for about 28-30 minutes. You want the crust to be a light golden brown. Once it’s done, remove it from the oven and allow it to cool for a bit.
  • While the crust is cooling, let’s whip up that luscious caramel! In a medium saucepan, combine the unsalted butter, light brown sugar, light corn syrup, and sweetened condensed milk. Heat it over medium-high, stirring frequently until it starts to boil.
After it reaches a boil, reduce the heat slightly and let it simmer for about 15 minutes, stirring often. You want it to turn a deeper golden brown, which means it’s ready!
  • Pour that warm, gooey caramel over your cooled cookie crust. Allow it to cool a bit at room temperature, then chill it in the fridge for about an hour.
  • Now for the pièce de résistance! In a microwave-safe bowl, combine the chocolate chips and the tablespoon of butter. Microwave in 30-second increments, stirring well in between, until everything is melted and smooth.
  • Pour the silky chocolate over the chilled caramel layer and spread it out evenly.
  • Put the entire dish back in the fridge for one more hour to let that chocolate set. Once it’s firm, it’s time to cut into bars.
