Sheet Pan Buffalo Chicken

Ingredients

  • 1 –1 ½ lbs chicken breasts
  • 1 lb potatoes cut into 1-inch pieces
  • 1 red onion chopped
  • 1 tbsp olive oil
  • 1 tbsp garlic powder
  • 2 tsp onion powder
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ cup Buffalo sauce
  • cup blue cheese dressing
  • 2 green onions diced

Instructions

  • Preheat the oven. Preheat your oven to 425°F.
    Prep everything. Chop the potatoes, red onion, and chicken into bite-sized pieces.
  • Arrange on the pan. Place the potatoes and red onion on one side of a medium sheet pan and the chicken on the other side. Drizzle everything with olive oil, then sprinkle the seasonings over the chicken and vegetables. Toss each side separately until well coated.
  • Bake. Bake for 15 minutes, then carefully toss everything on the pan. Return it to the oven and bake for another 10 minutes, or until the chicken is cooked through and the potatoes are tender.
  • Add the sauce. Drizzle the blue cheese dressing over the potatoes and vegetables, then drizzle the Buffalo sauce over the chicken.
  • Garnish and serve. Sprinkle the diced green onions over everything and serve warm.
