Three Cheese Mini Quiche

Ingredients

  • 4 large flour tortillas
  • 12 eggs
  • 1/3 cup cottage cheese
  • 1/4 cup parmesan
  • 1/4 cup chopped jalapeños
  • 1/2 cup shredded cheddar cheese
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika

Instructions

  • Using a 4" round cutter (a sour cream container lid works great!), cut out three rounds from each tortilla. These will be the base of your mini quiches.
  • Once cut, press each round into a greased cupcake pan, making sure they fit snugly.
  • Crack one egg into each tortilla-lined cupcake hole. Don’t worry if it looks a little messy — you’ll whisk everything together later!
  • Mix the salt, pepper, garlic powder, and paprika in a small bowl. Sprinkle the seasoning mixture over each quiche for an extra punch of flavor.
  • Grab a fork and gently whisk the egg filling in each cup, making sure all the cheesy goodness and seasoning is mixed evenly with the eggs.
  • Now it’s time to load up on flavor! Divide the cottage cheese, parmesan, cheddar, and jalapeños between the 12 quiches, adding about 1 tablespoon of each ingredient into every tortilla cup.
  • Pop the tray into the oven at 350°F for 20-25 minutes, or until the eggs are set and the tortilla edges are lightly browned. You’ll know they’re ready when they puff up and smell amazing!
