Once cut, press each round into a greased cupcake pan, making sure they fit snugly.
Crack one egg into each tortilla-lined cupcake hole. Don’t worry if it looks a little messy — you’ll whisk everything together later!
Mix the salt, pepper, garlic powder, and paprika in a small bowl. Sprinkle the seasoning mixture over each quiche for an extra punch of flavor.
Grab a fork and gently whisk the egg filling in each cup, making sure all the cheesy goodness and seasoning is mixed evenly with the eggs.
Now it’s time to load up on flavor! Divide the cottage cheese, parmesan, cheddar, and jalapeños between the 12 quiches, adding about 1 tablespoon of each ingredient into every tortilla cup.
Pop the tray into the oven at 350°F for 20-25 minutes, or until the eggs are set and the tortilla edges are lightly browned. You’ll know they’re ready when they puff up and smell amazing!
