Ingredients

  • 1 cucumber, shredded
  • 2 cups plain Greek yogurt
  • 2 tablespoons lemon juice
  • 3 sprigs fresh dill, chopped
  • 3 sprigs fresh parsley, chopped
  • 2 tablespoons garlic, minced
  • 1/3 teaspoon salt
  • 1/3 teaspoon pepper

Instructions

  • Start by grating the cucumber into a bowl. Here’s the key part—cucumbers hold a lot of water, so you’ll want to press out the moisture and drain it well. This keeps your Tzatziki from becoming too watery and ensures a nice, thick dip.
  • In a medium-sized bowl, add the Greek yogurt, shredded cucumber, lemon juice, and minced garlic. Give it a good stir until everything is nicely combined.
  • Now it’s time to bring in those fresh herbs and seasoning. Toss in the chopped dill, parsley, salt, and pepper, and mix well. You’ll notice the herbs add a pop of color and a burst of flavor!
  • Your Tzatziki is now ready to enjoy! Serve it cold with pita bread, fresh veggies, crackers, or even chips.
