First, you’ll need to chop your watermelon, if it isn’t already cut up.
Next, chop your mint.
Add the olive oil, lime juice, and sea salt to a small bowl, and stir to combine.
Place 2 chunks of watermelon onto each skewer, and arrange skewers on a platter.
Drizzle the liquid mixture over the watermelon skewers, then sprinkle with feta, and chopped mint.
Cover, and refrigerate until ready to serve.
