Pumpkin Pie Tarts

These Pumpkin Pie Tarts are one of my favorite homemade fall breakfast recipes. They’re flaky, buttery, filled with pumpkin pie filling, and topped with a sweet cinnamon glaze that makes them the perfect comfort food for autumn.
Pumpkin Pie Pop Tarts

Ingredients
- (4) Pie Crust
- 1 cup of Pumpkin Pie Mix
- 1 cup of Brown Sugar
- ½ a stick of Butter (melted)
- 1 cup of Powdered Sugar
- ¼ a cup of Brown Sugar (packed)
- 1 teaspoon of Vanilla
- 1 teaspoon of Cinnamon
- 2-3 tablespoons of Milk
- 1 Egg (beaten)
Instructions
- Begin by stacking two pie crusts on top of each other. Use a pizza cutter to trim them into a square, then slice the square into four even rectangles. You should end up with eight rectangles in total, enough for the tops and bottoms of four pop tarts. Repeat this process with the remaining two pie crusts.
- In a large mixing bowl, combine the pumpkin pie mix, melted butter, and 1 cup of brown sugar. Stir until smooth, then transfer the mixture into a piping bag.
- Take one rectangle and lay it flat. Pipe the pumpkin mixture down the center, then brush the edges with the beaten egg to help seal it. Place another rectangle on top, gently pressing the edges together. Use a fork to crimp the edges for a secure seal, and poke a few holes on top with a fork or toothpick to allow steam to escape.
- Line a cookie sheet with parchment paper and lightly spray it with cooking oil. As you prepare each pop tart, place it gently on the sheet.
- Once all 8 pop tarts are assembled, brush the tops with the remaining beaten egg. Bake them in a 400°F oven for 10-12 minutes, or until they turn golden brown. Allow them to cool once done.
- While the pop tarts cool, prepare the icing by mixing powdered sugar, packed brown sugar, vanilla, and cinnamon in a bowl. Gradually add milk, one tablespoon at a time, whisking between additions until the icing reaches a smooth, glaze-like consistency. Pour this icing into a piping bag.
- Pipe the icing over each cooled pop tart, then serve and enjoy!

Mini Pumpkin Cakes with Caramel Buttercream Frosting

These Mini Pumpkin Cakes with Caramel Buttercream Frosting are spiced, moist, and topped with rich caramel frosting—an irresistible single-serve fall dessert for parties, bake sales, or cozy gatherings.
Mini Pumpkin Cakes w/ Caramel Buttercream Frosting

Ingredients
For the Cake:
- 2 cups all-purpose flour
- ½ tsp cinnamon
- 3 tsp pumpkin pie spice
- 2 tsp baking soda
- ½ tsp salt
- 4 eggs
- 1 (15 oz) can pumpkin puree
- 1 cup sugar
- ½ cup light brown sugar
- 1 cup vegetable oil
- 2 tsp vanilla extract
For the Frosting:
- 1.5 sticks unsalted butter (room temperature)
- 3 cups powdered sugar
- 2.5 Tbsp heavy cream
- ⅓ cup caramel syrup (I recommend Ghirardelli)
- ¼ tsp salt
Instructions
- Start by preheating your oven to 350°F. Line an 11 x 17-inch baking sheet with parchment paper. Grease the sides and set it aside.
- In a small bowl, whisk together the flour, cinnamon, pumpkin pie spice, baking soda, and salt.
- Grab a large mixing bowl and an electric or hand mixer. On medium speed, mix together the eggs, pumpkin puree, white sugar, brown sugar, vegetable oil, and vanilla until it’s all smooth and well combined.
- Now, slowly add the dry ingredients into the wet mixture in thirds, making sure everything is incorporated.
- Pour your batter evenly into the prepared baking sheet. Use a spatula to level it out.
- Bake for about 20 minutes, or until a toothpick inserted in the center comes out clean. Once it’s done baking, let the cake cool on a rack for a few minutes, then pop it into the freezer for about 15-20 minutes to cool completely.
- While your cake is cooling, it’s frosting time! In a large mixing bowl, beat the butter on medium speed for about a minute. Then, slowly add in the powdered sugar. Pause to scrape the bowl, and add the heavy cream and caramel syrup.
- Keep mixing until the frosting is smooth and fluffy. Taste the frosting, and if you want a little extra caramel flavor, you can add more caramel syrup. Add a pinch of salt to balance that sweetness.
- Once the cake has cooled completely, grab a 2-inch round cookie cutter and cut out 18 little cake circles. These will make 9 adorable mini cakes (each cake has two layers). If you don’t have a cookie cutter, a glass with a similar diameter works just as well.
- Start by piping a generous layer of frosting on the top of the bottom cake layer. Place a second cake circle on top, and pipe more frosting onto the top.
- To finish, you can add a little whipped cream, a sprinkle of cinnamon, or a drizzle of extra caramel syrup on top.

Puff Pastry Apple Roses

These Apple Roses are not only a feast for the eyes but also a delightful treat for the taste buds. Made with flaky puff pastry, sweet apples, and a hint of cinnamon.
Puff Pastry Apple Roses

Ingredients
- 1 box Pepperidge Farms puff pastry sheets
- 3 red apples (I used Fuji, but any crisp variety works)
- ½ Juice of a lemon
- ¼ cup granulated sugar
- 2 tbsp butter (melted)
- 1 tbsp cinnamon powder
- Powdered sugar
Instructions
- Preheat your oven to 350°F and spray a muffin tin with nonstick spray.
- Wash and core your apples, then slice them super thin—I like to keep the red skin on for that pretty rose-petal look.
- Toss the slices into a bowl with the juice of half a lemon, a teaspoon or two of sugar, and a pinch of cinnamon.
- Unfold the puff pastry sheets and brush them with your melted butter. Sprinkle the remaining sugar and cinnamon mixture generously over the buttered side.
- Now, cut each sheet into 6 long strips (you’ll end up with 12 total).
- Take one strip of puff pastry and arrange a few apple slices along the top half, letting the red peel peek out over the edge.
- Fold the bottom half of the pastry strip up over the apples (kind of like tucking them in). Then, gently roll the strip into a spiral! Place it in the muffin tray, and repeat for the rest of the strips.
- Pop your tray in the oven and bake for 25-30 minutes until the roses are golden and the pastry is puffed and flaky.
- Once the apple roses are out of the oven, let them cool for about 10 minutes.
- Serve and Enjoy! Dust them with powdered sugar to make them look extra pretty.

- ½ teaspoon salt
For the Cinnamon Sugar Coating:
- ½ cup sugar
- 1 teaspoon cinnamon
- Cinnamon sticks (for garnish)
Instructions
- Start by warming up your milk and adding it to a small bowl with the yeast and a couple of tablespoons of sugar. Give it a quick stir and let it sit for about 5 minutes.
- In a large mixing bowl, combine the pumpkin puree, egg, softened butter, and the remaining sugar. Whisk until everything is smooth and delicious.
- Once your yeast mixture is all puffed up, pour it into your pumpkin mix. Give it a good mix until combined.
- Now, add the flour, pumpkin pie spice, and salt.
- Use a rubber spatula to fold these in until you have a thick, well-mixed dough.
- After an hour, transfer the dough to a floured surface and give it a knead for a few minutes. It should feel firm and bouncy.
- Divide the dough into 8 equal pieces and roll each into a ball.
- Cut a long piece of thick string and tie it around each dough ball, wrapping it like a present. This will create those adorable pumpkin indentations.
- Preheat your oven to 350°F. While the donuts are frying, mix the sugar and cinnamon in a small bowl.
- Once the donuts are done frying, let them cool on a wire rack. After they’ve cooled and the excess oil has dripped off, cut the string away. Pop them in the oven for another 5-8 minutes to make sure the centers are fully cooked.
- Roll each donut in the cinnamon sugar mixture until they’re completely coated.
- Stick a cinnamon stick in the center of each donut to create a cute little pumpkin stem.
- Serve your pumpkin donuts warm!

Caramel Apple Cheesecake

This Caramel Apple Cheesecake brings together the best of both worlds, combining the creamy goodness of classic cheesecake with the irresistible flavors of caramel and cinnamon apples.
Caramel Apple Cheesecakes

Ingredients
For Graham Cracker Crust
- 2 cups graham crackers (crushed)
- ¼ cup brown sugar
- ½ cup unsalted butter (melted)
For the Cheesecake Filling
- 24 ounces cream cheese (softened)
- 1 cup white granulated sugar
- ½ teaspoon salt
- 1 ½ tablespoons all-purpose flour
- 4 eggs
- 1 tablespoon vanilla extract
- ½ cup sour cream
For Caramel Apple Topping
- 3 Granny Smith apples (peeled and chopped)
- 1 tablespoon unsalted butter
- ¼ cup brown sugar
- 3 tablespoons white granulated sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ⅛ teaspoon salt
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 2 teaspoons vanilla extract
- ⅓ cup chopped pecans
- Caramel Sauce (For Drizzling Topping)
Instructions
- Start by lining a 10-inch springform pan with parchment paper, both at the bottom and around the sides. This little step will make removing the cheesecake later a breeze.
- In a food processor or blender, crush the graham crackers until they turn into fine crumbs. Transfer them to a mixing bowl, and stir in the brown sugar. Add in the melted butter, mixing it all together with a fork until the crumbs are evenly coated.
- Press this buttery mixture into the prepared springform pan, ensuring it’s even. A small glass works wonders to help you press it down smoothly. Pop this into the freezer while you get started on the cheesecake filling.
- Preheat your oven to 325°F. Now, let’s get that cheesecake filling perfectly creamy! In a large mixing bowl, blend the softened cream cheese with a hand mixer until it’s nice and smooth.
- Add the white sugar, salt, and flour to the cream cheese and mix again. Next, add the eggs one at a time, making sure to mix after each addition.
- After the last egg, add the vanilla extract and sour cream, and give it a final mix until everything is smooth and combined.
- Take the graham cracker crust out of the freezer and pour the cheesecake filling on top. Use a rubber spatula to smooth the top.
- Bake the cheesecake for about 55-60 minutes, or until the edges are set, but the center is still a little jiggly. Once it’s done, turn off the oven, crack the oven door open, and let the cheesecake finish cooking for an hour with the residual heat.
- After that hour, take the cheesecake out of the oven and let it cool for a bit. Cover it with plastic wrap and chill in the refrigerator for at least 6 hours, or overnight if you can. Patience is key here—it’ll be worth the wait!
- Now that the cheesecake is chilling, it’s time to make the apple topping. In a saucepan, melt the butter over medium heat, then add the chopped apples, brown sugar, white sugar, cinnamon, nutmeg, and salt. Stir everything together and let it cook for about 5-7 minutes until the apples start to soften.
- Add the lemon juice, cornstarch, and vanilla extract, stirring to combine. Let the apples cook for another 5-7 minutes until they are soft, and the sauce has thickened into a luscious caramel-like consistency.
- Once the cheesecake is fully chilled, it’s time for the fun part! Pour the caramel apple topping over the cheesecake, spreading it evenly. Drizzle with a generous amount of caramel sauce, and sprinkle the chopped pecans on top for an added crunch.

- ½ cup light corn syrup
- ⅓ cup light brown sugar, packed
- ⅓ cup evaporated milk
- 3 cups white chocolate chips

Apple Pie Cookies

Filled with a spiced apple filling and drizzled with homemade caramel, these apple pie cookies are the perfect bite-sized dessert for fall, a great bake sale item.
Apple Pie Cookies on Gold Marble

Ingredients
For the Cookies:
- ½ cup unsalted butter, browned
- 1 cup brown sugar
- ½ cup white granulated sugar
- 1 ½ teaspoon vanilla extract
- 2 eggs
- 3 cups all-purpose flour
- 1 ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 ½ teaspoon cinnamon
- ½ teaspoon nutmeg
For the Apple Filling:
- 2 cans apple pie filling, rinsed and drained
- ¼ cup white granulated sugar
- ¼ cup + 1 teaspoon brown sugar
- ¾ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 teaspoon lemon juice
- 2 teaspoon cornstarch
- 2 teaspoon water
- ½ teaspoon vanilla extract
For the Homemade Caramel Sauce:
- ⅔ cup white granulated sugar
- ¼ cup water
- 2 tablespoons unsalted butter
- 6 tablespoons heavy cream
- ½ teaspoon salt
Instructions
How to Make Apple Pie Cookies
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set it aside.
- In a large mixing bowl, whisk together your browned butter, white granulated sugar, and brown sugar until well combined. Add in the vanilla extract and both eggs, whisking until the mixture becomes smooth and glossy.
- Next, pour in your dry ingredients: the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Fold everything together with a spatula until a thick dough forms.
- Using a 2-inch cookie scoop, form dough balls and place them on the prepared baking sheet, leaving about 2 inches between each ball.
- Bake the cookies for about 12 minutes, or until they have spread out and crinkles appear on the surface.
Making the Apple Filling
- Take your canned apple pie filling and rinse off the thick sauce surrounding the apples. This step may seem strange, but it helps the filling better integrate into your cookies. Place the rinsed apples into a saucepan.
- Add in your sugars, cornstarch, cinnamon, nutmeg, lemon juice, vanilla extract, and water. Stir the mixture over medium heat until the apples start to soften and the filling thickens.
- As the mixture heats up, break the apples into smaller chunks using your spoon. Once it reaches a boil and becomes thick and delicious, remove it from the heat and set it aside to cool.
Homemade Caramel Sauce (Optional)
- In a clean saucepan, combine the sugar and water over medium heat. Stir occasionally, and keep an eye on it as the mixture begins to turn an amber color—this is your caramel starting to take shape!
- Once the amber color is achieved, lower the heat and carefully whisk in the butter and heavy cream. The mixture will bubble, but keep stirring until everything is combined and smooth. Finish by stirring in the salt.
Putting It All Together
- Now that your cookies are baked and cooled (at least for a few minutes), use a spoon to place some of the apple filling into the center of each cookie, leaving about a ½-inch border around the edges.
- Drizzle the homemade caramel sauce generously over the tops of the cookies. Trust me, the sweet, buttery caramel paired with the apple filling is irresistible! Transfer to a platter and serve!
