Important Recipe Notes

- Cut the chicken breasts in half to make four portions. Try to keep the pieces similar in thickness so they cook evenly.
- Halve the baby potatoes if they are medium or large in size. Smaller potatoes can be left whole if they are small enough to cook within the same time as the chicken.
- Arrange everything in one layer: Spread the chicken, potatoes, green beans, and cherry tomatoes across the sheet pan without overcrowding. This helps the ingredients cook evenly.
- Check the chicken for doneness: The chicken should reach an internal temperature of 165°F (74°C) at the thickest part. If needed, cook it a little longer before adding the mozzarella.
- Add the mozzarella near the end: Place two slices of fresh mozzarella on each chicken portion during the last 5 minutes of baking so the cheese melts without overcooking.
- Finish with fresh basil and balsamic vinegar: Add these after baking to keep the basil fresh and bring out the Italian-inspired flavors.
- Adjust the seasoning to taste: You can add more garlic powder, Italian seasoning, salt, or pepper depending on your family’s preference.
- Serve it fresh: This dish is best served warm while the mozzarella is melted and the vegetables are tender.
