Important Recipe Notes

Shrimp Scampi with Linguini
  • Follow the package directions and avoid overcooking the linguine so it holds its shape when tossed with the sauce.
  • If the shrimp are wet after thawing, pat them dry with paper towels before seasoning. This helps them cook evenly.
  • Do not overcook the shrimp: Shrimp cook quickly, so remove them from the skillet as soon as they turn pink and opaque to keep them tender.
  • Adjust the spice: The Cajun seasoning and crushed red pepper add a little heat. Use less red pepper if you prefer a milder pasta dish.
  • Save about ½ cup of pasta water before draining. Add a small splash if the sauce needs help coating the noodles.
  • Adjust the Italian dressing: Start with ¼ cup and add more as needed to get the flavor and consistency you like.
  • Add the Parmesan at the end: Toss the cheese with the warm pasta and shrimp, then sprinkle extra Parmesan and fresh parsley on top before serving.
  • This pasta tastes best when served warm while the buttery garlic sauce coats the linguine.
